The spirit matures until it reaches its optimum taste profile, blending the complex nuances of the cask with the gentle aromatic Indian Summer spirit. These gins are released in small batches with their cask heritage documented on the labels. Each bottling is as unique as the cask it has lain in. Natural gins with great character and complexity.
【Tasting Notes】
Nose: Fresh, vanilla and caramel from the cask, floral, hints of pine and meadow. Taste: Zesty lemon peel initially on the palate, oily mouth feel, nice texture, almonds in after taste. Well balanced flavours of the cask and the gin. With water, creaminess develops, more vanilla, white chocolate and nougat. Serve: On its own or with a touch of water to appreciate the breadth of flavours, or mixed in a whisky or gin cocktail for an exciting twist on a classic serve.
