For upwards of 40 years the team at Duncan Taylor has experimented by maturing whiskies in smaller casks with great success.
Our research stemmed from the simple premise that there is more wood interaction with whisky over a shorter period of time in a small cask than in a large cask, therefore allowing a more rapid melding of wood, air, and alcohol.
【Tasting Notes】
Nose: Sweet sherry fruits. Raisins and dried figs. Deep malt mixed with a spicy fruit cake. Some sweet pipe tobacco. Palate: Beautiful finesse. More herbal than the nose, with a touch of mint amongst a leafy forest floor. Hints of bitter orange and more spicy fruit cake. Finish: Long and rich, full of umami. The richness of the sherry is beautifully balanced with some bright mineral notes, and the residual sweetness is offset by the gentle spice.
