WINE MAKING:The grape is harvested during the first fortnight of the month of October, when the grape reaches its optimum point of phenolic maturity. For the elaboration of this wine a selection of grapes is used, from plots of land with better quality. Fermentation is carried out in stainless steel tanks at a controlled temperature of between 25-28ºC. Automatic control of overpumping for the extraction of aromatic and colour compounds.
AGEING:Twenty four months in new American oak barrel.
BOTTLE:Twelve months in bottle.
【Tasting Notes】
AROMA:Great aromatic potential, with notable varieties of very noble and balsamic combined aromas, combined with nuances of creams and vanillas, providing it with great character.
MOUTH:In the mouth it is complex, sweet and rounded, with sweet tannins, very noble, with notable nuances of black berry preserve.
AFTERTASTE:Long-lasting and pleasant, with clear balsamic aromas and flavours from the maturity in the barrel, with good harmony with the natural essences of this great variety
PAIRING SUGGESTIONS:Red meats, game and cured cheeses.
