For upwards of 40 years the team at Duncan Taylor has experimented by maturing whiskies in smaller casks with great success.
Our research stemmed from the simple premise that there is more wood interaction with whisky over a shorter period of time in a small cask than in a large cask, therefore allowing a more rapid melding of wood, air, and alcohol.
【Tasting Notes】
Nose: Earthy, Miso soup, sweet pipe tobacco and a grassy leatheriness. Some cooked dark fruits, blackberries and autumn raspberries. Underneath there are some floral notes of a fading summer bouquet. Palate: Rich and rewarding. Smoky barbecued meats marinated in Miso and honey. Fruity brown sauce made with dates and tamarind. The smoke is sweet and persistent. Finish: Long and resinous. The meatiness persists then more chocolate and tobacco. Elegant, with a gentle spicy warmth that balances the sweetness. The smoke fades away gently.
