For upwards of 40 years the team at Duncan Taylor has experimented by maturing whiskies in smaller casks with great success.
Our research stemmed from the simple premise that there is more wood interaction with whisky over a shorter period of time in a small cask than in a large cask, therefore allowing a more rapid melding of wood, air, and alcohol.
【Tasting Notes】
Nose: TA very typical Highland Park. All on heather, fresh fruits, and honey. Lemon peel and eucalyptus. A salty sea breeze, kelp, fresh almonds and vanilla. A pine forest by a rocky beach with some chalky mineral notes underneath. Palate: A lovely consistency on the palate. Biscuity, yeasty, and lemony, Fresh bread scattered with sea salt and drizzled with honey. Very zesty and fresh. A touch of warming spice livens the palate, and lifts the fruits. Finish: Long and slightly less sweet than the palate, A touch of bitter herbs, coriander, and a subtle hint of mint. The honey is still there but a little more restrained, as with the lemony, zesty notes. A hint of olive brine appears at the end.
